I was also asked for my Spanish rice recipe. I don’t have it written down, but it is really easy. First you need to make this home made taco seasoning.
Then in your rice cooker, add the following.
- 1 cup uncooked brown rice
- 1 can diced tomatoes (low sodium with juice)
- 2 tablespoons olive oil
- 1 tablespoon home made taco seasoning
- optional add-ins
- 1 or 2 cups black beans
- 1/2 cup diced onion
- 1 tablespoon dried oregano
Make sure there is enough liquid based on the amount of rice and the rice cookers directions. You can add water to make up the difference or leave out some of the canned diced tomato juice. That’s it, turn on your rice cooker and enjoy! You can add 1 or 2 tablespoons of cilantro when done if desired.
